Casablanca Carrots from Well Fed 2

When I decided to make the Pan Fried Sardines from Well Fed 2, I noted that Melissa suggested a few recipes as sides.  The Casablanca Carrots were suggested and so they went on to my list.  Not only did the picture in the book look appetizing but I know that I usually have carrots on hand in my fridge.

I gathered my ingredients, and got started by peeling and chopping the carrots.  


I loaded the chopped carrots in to a covered pyrex dish with my silicone steamer basket and steamed them in the microwave.  


While they were steaming, I prepped the spices and herbs.  


Once steamed, I mixed the carrots with the spices and refrigerated the carrots for 20 minutes as they are to be served cool or at room temperature.  When you mix the carrots into these spices, take a moment to enjoy the aroma.  


Once chilled, I added some olive oil, the parsley, salt and pepper.

Here they are with the pan fried sardines.  


Accessibility & Cost of Ingredients:  You should be able to find everything you need for this recipe at your "big box" grocery store.  I luckily had all the spices in my pantry already.  

Preparation & Cooking Time:  It took me 16 minutes to peel, cut, steam, (9.5 minutes in the microwave) and spice the carrots to refrigerate for 20 minutes.  It took me about 2 minutes to finish mixing up the dish after it chilled.  My total time for this recipe was 38 minutes.  

Clean up:  Everything I used went into the dishwasher.  Yay! 

The Paleo Review:  Thumbs Up!  These carrots are sweet, tangy and spicy all at the same time. What a great new twist on a vegetable that is always sitting in my crisper drawer.  I did taste the carrots while they were a bit warm, and maybe I'm strange, but I preferred the carrots warm rather than the suggested cool or room temperature.    This will certainly be going in my keeper quick side dish recipe binder section.  

I made these as a side for the Pan Fried Sardines.  I though the flavor of the carrots over powered the fish just a tad for my taste.  Regardless, the Sardines and these Carrots are two great reasons to give Well Fed 2 a try.
